Simple Strawberry Cake

Ingredients:
1 Box White Cake Mix
1 3oz Box Strawberry Jell-O
1 10 oz Box Sweet Frozen Strawberries – drained, keep juice
      (Save ¼ cup of drained Strawberries for icing)
Directions:
Preheat oven to 350 degrees

Mix Jell-O packet into dry cake mix.
Prepare white cake mix AS DIRECTED
EXCEPT, use strawberry juice and water to make up the amount of liquid needed
(i.e. if directions call for 1 ¼ cup of water, use 1 cup of
water and ¼ cup of strawberry juice).
Add drained strawberries
(Be sure to reserve ¼ cup of drained strawberries for the icing).
Mix thoroughly.
Pour into 9 x 13 pan and bake 25-30 minutes.
Cake is done when toothpick comes out clean.
Do not over bake.Cool thoroughly before icing.
Cake must be stored in the refrigerator.
Yield 15.
Topping:
Strawberry Icing

1 Stick Margarine – room temp.
12 oz Cream Cheese
2 tsp. Vanilla
2 cups Powdered Sugar
¼ cup Sweet Frozen Strawberries – drained (reserved)
Topping Directions:
Cream margarine, cream cheese and vanilla.
Add powdered sugar.
Beat until very smooth.
Fold in drained Strawberries.
Enough for one cake iced thick.
Notes:
Top with FRESH strawberries if desired

Make sure you chill this cake.  It is so simple and delicious!
