1 Box White Cake Mix 1 3oz Box Strawberry Jell-O 1 10 oz Box Sweet Frozen Strawberries – drained, keep juice (Save ¼ cup of drained Strawberries for icing)
Preheat oven to 350 degrees Mix Jell-O packet into dry cake mix.Prepare white cake mix AS DIRECTEDEXCEPT, use strawberry juice and water to make up the amount of liquid needed(i.e. if directions call for 1 ¼ cup of water, use 1 cup of water and ¼ cup of strawberry juice).Add drained strawberries(Be sure to reserve ¼ cup of drained strawberries for the icing).Mix thoroughly.Pour into 9 x 13 pan and bake 25-30 minutes.Cake is done when toothpick comes out clean.Do not over bake.Cool thoroughly before icing.Cake must be stored in the refrigerator. Yield 15.
Strawberry Icing 1 Stick Margarine – room temp. 12 oz Cream Cheese 2 tsp. Vanilla 2 cups Powdered Sugar ¼ cup Sweet Frozen Strawberries – drained (reserved)
Cream margarine, cream cheese and vanilla.Add powdered sugar.Beat until very smooth.Fold in drained Strawberries.Enough for one cake iced thick.
Top with FRESH strawberries if desired
